Micah Hewitt is a new vigneron on the block. In the cellar, all wines are handmade, no-tech and involve ‘minimal fuckery’ as he describes. Majority of his wines are zero-zero, with the exception of a few cuvées.
The inspiration behind the name Defialy comes from Micah's parents, who would sign each letter or card they wrote to him and his sister with it when they were growing up. It's an acronym for "Don't Ever Forget I'll Always Love You".
Medium golden hue. Aromas of buttery, caramel popcorn and on the palate notes of dried apples, dried papaya, raisins, kumquat and a very slightly oxidative nuttiness. Super textural and complex. To serve between 14-16ºC.
