Jean-Marc Dreyer is a 4th generation winemaker who defies the traditional standard of Alsatian wines. His grapes are hand-harvested, then direct pressed or macerated typically between 1 to 2 weeks and transferred to foudres or large barrels to continue a long and slow fermentation which may last through spring. Jean-Marc believes that patience is fundamental to allow time to balance any reduction and volatility in the wines, while practising a selfless approach to his winemaking.
“Don’t mix up what you need, with what the wine needs. Focus on the vineyards, and focus on the rhythms of the harvest. The most important intervention of the winemaker is bringing in the best quality grapes.”
Cloudy dark ruby. The nose opens slightly green followed by red currants and leather. On the palate we find black fruit, sour cherries and earthiness. Fantastic for ageing a few more years for the aromas to settle and develop. To serve between 16-18ºC.
