Jean-Marc Dreyer is a 4th generation winemaker who defies the traditional standard of Alsatian wines. His grapes are hand-harvested, then direct pressed or macerated typically between 1 to 2 weeks and transferred to foudres or large barrels to continue a long and slow fermentation which may last through spring. Jean-Marc believes that patience is fundamental to allow time to balance any reduction and volatility in the wines, while practising a selfless approach to his winemaking.

“Don’t mix up what you need, with what the wine needs. Focus on the vineyards, and focus on the rhythms of the harvest. The most important intervention of the winemaker is bringing in the best quality grapes.” 

Deep golden yellow. The nose opens with lime and vanilla and the palate follows with tea-like notes, citrus, candied fruit and delicate tannins. Great potential for ageing. To serve between 10-12ºC.
