“My name is Mauro Vergano but everybody calls me Mauro!” Once a chemist developing flavors and aromas for big pharma, Mauro Vergano is now busy developing tiny amounts of probably the best vini aromatizzati in the world. By definition, these are wines crafted with added aromatics for an extra layer of flavor, texture and of course aromas.
Perhaps Piedmont’s most famous digestif. Its base wine is Barbaresco that’s been aged a year by Giuseppe Cortese. It gets its name from its key botanical here which is the bark of the quinine tree, otherwise known as the china tree. Other botanicals are ginseng, rhubarb, cinnamon, cloves, cardamom and bay leaves. There’s real warmth here; perfect at the end of the meal.
